Hearty Egg-in-the-Middle Recipe

If there’s one breakfast that everyone in our house agrees on—kids and adults alike—it’s Egg-in-the-Middle. This is the kind of simple, cozy, no-frills meal that is fast, easy, and feels like childhood and real home cooking all at once. Crispy toast, buttery edges, and a farm-fresh egg shining right in the middle… you can’t beat it.


On busy ranch mornings, especially during poultry season, this is one of the quickest ways to get protein into the kids before chores. It uses just a few ingredients, but when you start with pasture-raised eggs, the flavor is richer, the yolks are golden, and the whole thing tastes like the kind of breakfast people used to eat before life got so loud.

🍳 How to Make Egg-in-the-Middle

Ingredients

  • 1 slice of bread (sourdough is our favorite)

  • 1 egg (pasture-raised, of course!)

  • 1 tbsp butter

  • Salt + pepper

  • Optional: seasoning blends like our (coming soon!!) Chick Flick Dust, Cluck Yeah Classic, or a sprinkle of Lone Star Dust


Instructions

  1. Use a small biscuit cutter, glass rim, or cookie cutter to cut a circle from the center of your bread.

  2. Heat butter in a skillet over medium heat until melted and slightly sizzling.

  3. Add the bread (and the cut-out circle!) to the skillet and toast for 1–2 minutes.

  4. Flip the bread and crack an egg directly into the hole.

  5. Cook until whites are mostly set, then cover briefly if you like the yolk more firm.

  6. Season with salt, pepper, or your favorite 7 Arrow Ranch seasoning blend.

  7. Serve warm—don’t forget the little toast circle!

• Cheesy Egg-in-the-Middle: Add a sprinkle of cheddar during the last minute.

• Herb Version: Use Chick Flick Dust or dried herbs in the butter.
